Production

The grapes are hand-harvested from 20-60 year-old vines in the Salento peninsula of Puglia. Fermentation takes place at 28-30°C with daily pumping over, followed by 10 days maceration. Once malolactic fermentation is complete, the wine spends 6 months maturing and softening in large Slovenian oak casks before bottling.

Tasting notes

Warm and rich with aromas of fig and dried dark fruits. A generous palate with concentrated black cherry, liquorice spice and dark chocolate balances with soft, velvety tannins and moreish acidity.
