BOUTINOT AUSTRALIA 14% ABV
The Listening Station is a celebration of the old, Australian ‘listening stations’ used to track satellites across the empty, pitch-black sky. The wine serves to commemorate the cooler, vast, dark Australian night and the grapes for the wine were even picked at night-time to reinforce this.
The ancient Victorian soils where these grapes grow give the final wine greater finesse and a hint of eucalyptus. The grapes are picked at night and crushed within an hour before being fermented in temperature-controlled tanks to avoid the extraction of harsh tannins. Regular pumping over ensures good colour extraction and 20% of the final wine is aged in barrel to bring complexity and spice.
Smooth and supple with juicy dark fruit and a hint of white pepper and bacon fat. Slightly saline on the finish, making this wine deliciously moreish by the glass.
Moroccan lamb tagine, aubergine parmigiana or a board of hard, well matured cheeses.
